    I grew up with pinto and navy beans. Pinto with Ham or Hamburger meat and white cornbread. Navy always with Ham and yellow cornbread. Sometimes we had either with biscuits instead of cornbread. After school Mom would make mashed pinto bean sandwiches with mustard. I still incorporate these meals with some additions now. I am 70.

    Can Monk Fruit be used safely as a sugar substitute to water bath cherries? I have to cut out sugar, but would like a small amount of sweetness in them. I don’t like most of the other sweeteners because of the aftertaste. Thanks for your help. Love the videos.

    Many meals I make involve burger and beans. Opening a pint of beans to add to burger and whatever else is needed for the dish seems to always end up with leftovers--usually not enough for a meal So--I've started canning Beef 'n Beans. 1/3 to 1/2 cup of cooked burger (depending on how much burger I have), then fill a pint 3/4 full of soaked beans. Whatever spices and herbs suit my fancy of the moment, water to the correct headspace, then pressure for 75 minutes. This worked out so well that I have ventured out further into beanville. Any white beans with ground pork or sausage, cannelini beans with turkey, Anasazi or mayacoba with chicken, red beans with beef or venison...the combinations are endless. The best thing is that, with the addition of the vegetable part of the recipe, or the making of the pint into 'refried', or patties, there are no leftover dibs and dabs. I actually do like some leftovers--usually planned-overs--but I got tired of the lab in my fridge. My anti-virals don't need to include homegrown 'I wonder what that was' drugs, thank you very much! A few days ago, I canned 17 pints of Beef 'n Beans, half with the addition of smoked paprika. The protein for 17 meals, on the shelf, easy-peasy, and, since the burger was on sale, relatively cheap. Love, love beans!!

    Fixed pinto beans for our 4 th of July Bar B Q. I use a wonderful recipe from Texas that has been in the family over 50 years. It’s such a family favorite that it is asked for every time we Bar B Q!

    I want so desperately to incorporate more beans in my diet simply for the economic nutrition along with ease of storage. But I'm just not a huge fan of most beans. However, that salad looked phenomenal, and i will definitely try that. Thank you!!

    If I’m not mistaken….I believe you can use those huge flour tortillas to make burritos…they are used to tuck the beans in fold it up and bake or fry them.

    This is wonderful. It is because of your advice Pam that I have canned pinto's and other varieties. I was having canned beans that smelled bad so you recommended that I use distilled water.     To keep your salt from clumping up put 5-6 dry pinto beans in your container and they will keep the salt from sticking together. My mother taught us to do that when we were little I’m 65 now and it’s always worked for me . Just leave them in the container.

    I love Mexican food so have really enjoyed this video. I use chicken broth when cooking many dishes. My husband, who passed away almost 3 months ago, had a very sensitive digestive system, so I found cooking with chicken broth helped. I don’t cook much these days, but I am going to definitely make the pinto bean salad.

    Wouldn’t you run out of water to go beyond 3hrs? What kind of canner can go +-6 hrs at water canning. I ran out of water pressure canning at 75 minutes until I adjusted the water level. Love your teaching, gives food for thought.

      Do you have any idea how big, tall (6 feet high), bulky, and heavy a fridge that size really is? It would take 3-4 of us to do that, much less working in such a cramped space. I am 77 and Pam is 80. I also forget, we would have to lift two fridges (not one) over our waste-high island/counter horizontally, plus the freon in both it would really disturbed. So, we are not helpless. We are practical and extremely careful. We chose to wait. Jim
